Coconut biscuits | Ocean Gardens | Easy Recipes

Recipe submitted by Una Abbott from the CWA Cookery Book and Household Hints 

Treat yourself to an afternoon delight with this easy, but very tasty, Coconut Biscuit recipe. Delicious, quick to make and only five ingredients (which are probably in your cupboard already). Dunk into tea and enjoy!

Ingredients:

  • 125g butter
  • 1 cup coconut
  • 1/2 cup sugar
  • 1 egg
  • 1 cup of self raising flour

Method:

  1. Beat biscuits and sugar to a cream, add egg and mix well.
  2. Add coconut and flour.
  3. Mix all together. Roll out thin and cut into biscuits. Bake until light brown in a hot oven.
